Editor’s Note: From the humble omelet to fluffy gourmet french toast, lots of recipes call for eggs. As a society we’re sort of programmed to think of them as a cheap food that, with knowledge and technique, can allow you to feel like you’re eating well and even decadently when you’re on a budget. When I was a college student I read tons of advice about how to kick up your ramen noodle game by adding an egg. As a young mother it regularly made a list of shoestring pantry essentials along with rice and beans.
This price hike is merely an inconvenience for families that don’t blink twice at spending $5 on other grocery items like, say, a bag of Doritos. For families who can only dream of casually buying those Doritos, who rely on eggs in their traditional role as a truly cheap food with a lot of nutritional value and versatility, it’s catastrophic. There’s no really comparable food that ticks all the boxes an egg does. While some of the factors contributing to the price increases are beyond quick and easy fixes (such as the bird flu outbreak), the cage-free laws should perhaps be a lower priority than low-income families’ ability to afford their groceries.
